With an international eye currently on Danish fashion and the culinary movement known as New Nordic, we decided to fuse the two for a mouthwatering series focussing on the hues and shades of a traditional Danish open sandwich, otherwise known as Smørrebrød. Working together with stylist Stephanie Loa, photographer Rasmus Weng Karlsen, we created Højtbelagt: the local term for a sandwich which is ‘built high’.
